Strawberry Shortbread Cupcake
These are great for summertime! The cupcake part of this is more of a shortbread which is not too sweet. I mixed up some homemade whipped topping and sliced strawberries to add to the top. The mix between the sweet whipped topping and the less than sweet shortbread was a perfect combination.
What I Used:
Shortbread Recipe
Fresh Strawberries
Whipping Cream
Vanilla Extract
Confectioners Sugar
Cake Batter Fudge
So this may not be cupcake related, however it was delicious! I am a fan of cake batter and here is a way to eat it without having to eat the raw eggs. Such a simple recipe too!

Cupcakes For Ethan
About a month ago a little boy named Ethan passed away. He was only 9 and had been battling leukemia for quite some time. It was his third bout with cancer when he became ill with pneumonia. He just wasn't strong enough to fight it off. In effort to raise money to help his family with all the expenses they were facing I decided to sell cupcakes. He loved rubber ducks which is why I placed little yellow candy melt ducks on the cupcakes.

Almond Joy Cupcakes
I made these for a friend a while back who was testing my cupcake abilities! I was asked to make an "Almond Joy Cupcake" so I took the challenge head on. They were a success not only to my friend to my mother and aunt as well as anyone else who tried them. If you don't like coconut these aren't for you! I made a basic devils food cake as the base. The icing was a cream cheese icing with added shredded coconut. I then covered them in melted milk chocolate and topped them with sliced almonds.
What I Used:
A basic homemade devils food cake recipe
Milk Chocolate Chips
Semi Sweet Chocolate Chips
Cream Cheese
Shredded Coconut
Vanilla Extract
